Gala dinner for members and guests

Our gala dinner was held at the historic Hacienda de Cortes Hall from 1530, with a menu from the Hacienda executive chef Fernando Lagunas and his team. We had the attendance of 36 members and guests.
It was exciting to make this event, celebrate the Chaine among friends and get together after this challenging year!
This motivates us to work in 2021 with more events and surprises.

Appetizer. Small sopes (Thick corn appetizers)
(thick corn appetizers) with escamoles (maguey insect eggs), Mushrooms with Gorgonzola mousse, small chile en nogada (meat stuffed pepper with walnut sauce)

Second Course: Lobster tail with Burre Blanc sauce on a mashed sweet potato and beetroot bead

Main course: Stuffed Fie Gras Quail in Cumberlad sauce, with a sense of White truffle, smashed peas with Pernod, caramelized Torne Apple
Wine Chatauneuf du Pape Celler des Princes
Dessert: Mammee Napoleon suffle with almonds and figs Coulis in a red wine reduction
